    The more I think about it, the weaker the 10th floor was as part of the whole story. Especially the dynamic between the Crawlers and particularly Osvaldo. A lot of it seemed like an afterthought. The 11th floor and its revelations really saved the book imo.

    I never pat a steak with anything, ever. I salt it immediately and let it dry brine for at least 6 hours until the moisture gets drawn back in OR, if I want the steak sooner than that, I season it, bake it in a 200 degree oven until it hits 125, then sear it off.

    This might get a good sear but the steak won't be as good. Either give it enough time to properly dry brine (i.e. the moisture naturally gets drawn back in, away from the surface) or reverse sear it. Never pat dry a steak.
