Perch is tasty, just a lot of work to process.
My dads side of the family all live on a big lake in central MO(and my dad has a lakehouse down there) We do mostly bass/crappie fishing. I prefer the taste of crappie, it is just about my favorite fish to eat, but bass are a lot more fun to catch, they put up a lot more fight. But we definitely don't turn away any perch or bluegill that we catch in the process.
They do have a large 5-ish acre pond on their land as well that is stocked with bass and catfish. Catfishing is a somewhat boring endeavor though, but it's great for sitting around camping/drinking and catching a fish or 2 per hour while you wait. Those things are a hell of a fight to bring in, but I don't particularly like eating them, the smaller fish are a lot better, IMHO. I just don't like the extra fishy-flavor of catfish, those bottom-dweller fish tend to end up tasting denser/murkier or something, it's hard to describe.
