I just grabbed that online from here so it's not my image, but the other images on that page all look like win11. The only win11 machine I have is my Surface, which I hardly use now that I work from home.

Make sure to select choose another app, even if the program is listed in the right click menu, and you should get to this menu.

When you use the right click > open with option, there should be a checkbox or similar option to always use the chosen program to open that file type.

Defender and common sense is usually good enough.

Microsoft did go full asshole in Win11, making you have to select the default program for every file type it might open, instead of just setting one default browser. With major windows updates, it even sometimes resets it to the default of edge opening everything it can.
