Unfortunately those transformed dudes absolutely destroy me still, haven't found a reliable way to kill them besides backstabbing before they transform. I am just a scrub.

For the one near the beginning of the area: run away when he transforms, stick to the curved staircase that leads up to him. Play hit and run, lobbing firebombs at him.
Firebomb the fuck out of them, then never bother with them again.
I don't think the regeneration of estus flasks happens with time, but rather when you are in the same location as someone that uses an ember. So it can happen randomly. Not sure if you need to be at a low number of estus flasks for it to happen.I've noticed that estus flasks regenerate charges after a while, may be tied to how many souls you get. Or ezmode is accidentally activated in my copy.
The problem I see with a 2H str build using light armor is that's two things working directly in opposition to each other. Without the poise from medium/heavy armor you've got little to no super-armor frames on your attacks. I'm using heavy weapons myself, but I went for the dex ones after seeing a video of the Farron Greatsword's moveset last week. 40 dex/end, just enough str to equip the sword, 27 vig for 1000 non-cinder hp, and however much vit I need to stay under 70%. You could swap dex and str if you prefer the ultra str weapons instead of the dex ones, but the nice thing about dex is that there's always a boss or two that just shit all over big slow weapons and going dex allows you to swap in a uchigatana or some other fast weapon to fuck them up.Usually I run a light armor + 2h sword str build, so I'm looking for a decent light weight set too. P.S. Take a look at the sunbro armor. The chest and legs in particular are notable for having a poise:weight ratio that is greater than 1. You get it from
giving stuff to the crow girl. Specifically, homeward bone, lightning urn, siegbrau, and seed of a giant tree.
