If you cook a goose correctly your roasting pan is going to have a wire rack that will hold your goose out of the grease. The fat cooks out, leaving the meat delicious and moist. Plus it gives you a bit of goose fat, in which you can cook your fried potatoes, and they are god tier.

OK.You're not cooking goose correctly. When I serve it, it's not greasy at all. Cooking it correctly leave the grease in the pan, and the meat moist. Cooking a turkey in any way leaves the meat dry. It's good on sandwiches because you can put condiments on it to moisten it up. Turkey meat is simply not as tasty as goose meat. Not simply because of the fat content, as you falsely claimed. It has a different texture, and just a better flavour.
Don't be salty that you don't understand how meat cooks. Its really ok.
