I'm very jealous, all my peach blossoms get murdered by late frosts. Even if try and watch the weather/cover them etc....

This is where my fear is. But several sources who seem to know things well are telling me the chance of another frost of any significant severity here in N. Texas this year will be minimal, so I am cautiously optimistic. These are on saplings in my back yard (2 year olds), so I will probably cull around half the buds at some point to encourage a balance between fruit and branch/leaf growth.
