I buy half a cow at a time, and as much as I love me some beef, I don't think I'll get through it in a week. And, if done right, beef comes out of the freezing process pretty well. Don't be surprised if the fresh beef you buy at the grocery hasn't been frozen at one time or another.
Beef rarely gets frozen due to how quickly it moves and how expensive it is. Chickens are frozen all the time and everytime I see those always fresh never frozen Perdue commercials I roll my eyes.

I used to think that the seafood counter at the supermarket had "fresh fish". I was trying to buy some once and they were out of what I wanted and the guy explained to me that the stuff in the display case is the exact same fish that is in the freezer case, they just thaw it out and put it on some crushed ice to look pretty. You are actually better off buying the frozen stuff and thawing it yourself when you're ready to eat it. Beef is very robust compared to fish so if you can make good sushi from frozen fish I can't imagine that your beef is going to go downhill much just from being frozen.

pretty sure i read somewhere all fish designated for sushi or sushi grade has to be flash frozen then thawed to kill bugs.

Yes, it's the law. That stuff can be quite old too. It's stored at around -25 degrees for up to a year. People don't even notice it unless they are told then they suddenly become super tasters.

So is cheesecake supposed to puff up like this when it bakes? Theyve been turning out pretty much perfect, no air bubbles or anything that I assumed would cause something like that.

They used to have some fluffy Japanese cheesecake at a ramen/sushi place I went to in California. I don't have any idea how it's made but it was damn good.

If it is fucked up it should have a grainy texture/taste rather than the smooth, creamy goal.

Hard to se in the picture, could also be to much cream facing heat in the oven. You could try a springform and see if it yields better results.

It does rise slightly actually, but normally you make them in a spring form pan so it doesn't "mound" like that. You're using a pie tin. It'll do that.

Havin' a small whoopty doo at the Gravy shack today. Smoking a couple slabs of ribs, grillin' burgers, roasted herbed spuds, and bacon and pea salad. Plus other assorted stuff that I'm not responsible for cooking.

Sounds good, sir. I have an apple dressing stuffed pork loin that was seared and will be in the slow cooker for about 6 hours. It's about 140 now, I'll let it get to around 150, then pull it out to let it rest for 45 minutes or so.

It looks pretty good, but I think I overcooked the ribs a bit, they are seriously falling off the bone. Ah well.

You must have an oblong slow-cooker? I love pork and apples together, I bet that tastes great.

Pork came out pretty nice. Oblong slow cooker, yes. Pork and apples, with a stuffing type stuff in the middle is yum every time.

I was very happy with the ribs. I know some people don't like the meat falling off the bone with ribs, but these were and they were so damn good. I cooked them in the oven for 4 hours and then smoked them for about 1 1/2 hours.
