They turned out awesome, everyone had 3 or 4, even the skinny chicks. Tons of good food there, one guy made a hummus type dip w/o hummus.

It was

1 Cup of chopped walnuts
2 roasted red peppers
garlic
cumin
s&p
and olive oil to make it creamy

We only got 4th place this year out of 32 teams, we usually get 1st or 2nd. It was tons of fun though, alcohol was free with admission.

Cyb's lazy oven meal

Heat your oven to like 425 or so. Get a big ass piece of aluminum foil and lay it on a cookie sheet. You know those frozen chicken breast tenderloin things they sell? Just the raw chicken breast but they are trimmed down and frozen and usually in a bag? Toss a couple of those on the tin foil. Then pour some olive oil on them (not a ton, just enough to coat them some). Then toss some frozen precut veggies in there...they're easy to find at any supermarket. I usually prefer a "Mediterranean mix" I get at the store that has onions, red bell peppers, zucinni, squash, etc. You can toss frozen mushrooms if you want, or maybe some rice. Whatever you like. Something to go with the chicken. Next, get some good tomato sauce. I usually use a spicy arrabica tomato sauce. Just dump some on the chicken/veggies. Little, lot. Whatever. Now, the foil...make sure you didn't overload the foil because you are going to fold the foil into a pouch (use that to guide how much stuff you are adding). Like fold up the sides like you are making a boat and pinch the foil together like you're making a pouch/giant potsticker. Do the same for the ends. So in the end everything is kind of folded inside a sealed foil pouch on top of the cookie sheet. Now throw it in the oven and let it cook for like 40+ minutes. Then take it out and you can either serve from that point (if you did the pouch right, all the liquid/sauce will be inside the foil "boat"/pouch. Get a bigass spoon to just serve stuff onto a plate if you don't want to make a mess. Makes cleanup easy since you can chuck the foil pouch+leftover sauce/stuff into the trash after) or you can open the top of the foil pouch (steam...be careful! I use a butterknife sometimes to avoid that) and I throw it back into the oven for a bit so the meal gets a little direct heat exposure (and steam off a bit of the liquid).

Anyways, that is my go-to lazyman meal when I don't want something prepared or nuked, but I'm too lazy to prepare an involved meal. What is great about it is you can pretty much toss it in the oven after minimal effort and go watch a TV show or mess around on the PC while it cooks. It is also pretty hard to overcook, so it's not like those oven meals or a frozen pizza where you forget you had it in the oven and it is all charred because you left it in 3 minutes too long ;p

I'm going to smoke a turkey breast this week, and it has a tendency for the meat to be dry. I'm considering an injector, never have used one. Has anyone used one with success?

I may just hot smoke the fucker at 325 until it comes up to temp and not worry about it.

Smoke it frozen, that's what many bbq joints here in kc do to ensure the turkey stays most while giving it time to soak that smoke flavor up

About to try those ribs again but I'm going to try a different approach.

I'm going to make my own braising liquid and was wondering if this would work.

I've never used maple syrup, but it's probably a personal preference item, I don't know why it wouldn't work. I like sweet and spicy, though, I'd probably use brown sugar, or a little molasses.

Are you using AB's oven method? Can you grill them after they braise?

The last ribs I did, I spun off AB's method, and steamed the (seasoned) ribs for three hours or so with beer and water under a rack in the oven covered tight with foil, then smoked them for a couple hours.

That's worded horribly. I put the beer and water in a pan, put a rack on top, put two slabs on, then covered with foil. I like AB's method, but I'd probably not get the foil packets sealed up and would have braising liquid all over the place.

Yeah I'm using AB's oven method. I'm trying to figure out a good braise with what items I have in my house, unfortunately I don't have anymore brown sugar or molasses. I might just remove maple syrup entirely.

Yeah I double downed on foil this time since I really wrecked my oven last time due to a tiny hole in the foil. I guess I'll just improvise and post my results afterwards.

They turned out much better this time, the only problem was the quality of the ribs. I think next time I'll go to Whole Foods and make my selection there.

For the Braising liquid I chose to use Sweet Baby Ray's: Sweet & Spicy, Vinegar and Liquid Smoke. Once they were done cooking I drained all the liquid placed the oven on broil and coated the ribs in BBQ sauce and let it caramelize, they were really good.
