I use my cast iron skillet to cook the bread. No lid on it. It comes out out with an awesome, crunchy outer crust.

I've always done it in a dutch oven. Half the price of that dome thingy and it's a lot more versatile.

Sous vide scrambled eggs? You guys are just trying anything you can in the damn thing. That shit makes 0 sense.
Seriously. Slow heating impedes proper(in this context) curdling of the egg proteins, which is exactly what you want. Recipes will often temper eggs to prevent them from curdling. So, grats on tempering your scrambled eggs?

When I go camping I do what I guess is a sous-vide scramble or omelette I dunno. You just take all your fixings (bacon, cheese, peppers, onions, sausage, etc.) and have everyone put whatever fixings they want into a ziplock bag along with 2-3 eggs. Have everyone write their name on the bag and throw them into a boiling pot of water. A couple of minutes later pull them out and you have a delicious breakfast, with no frying pans to clean up either. Just want to double check to make sure those bags are sealed up nice and good first.

Haven't tried scrambled eggs, but I love doing eggs in the sous vide. Eggs on Toast is one of my favorite breakfasts and the soft-boiled eggs you can get with the sous vide are absolutely amazing. So creamy and delicious and nothing like I've had before.

145 for 1-1.5 hours will get you a really soft, creamy yolk and the whites will be just a little runny and creamy. 150 for the same amount of time will get you more solid eggs if you prefer, but I personally enjoy them @ 145 and I like to spread them over my toast like butter.

A buddy of mine at work swears by sous vide scrambled eggs, he says they are awesome. I have yet to have the time to try that.

A hot pan, some butter, and eggs with smoked paprika, garlic powder and a little salt and pepper are awesome too. And they take about 3 minutes to cook.

Yeah, the scrambled eggs don't make sense to me. So easy without the sous vide, so bad on texture with the sous vide. I like the camping idea, though. I tend to do something similar with dinner, but with potatoes, ontions, sausage or ground beef, and a fuck tonne of spices. wrap in tin foil, put in fire. Go for a swim. Dinner is done. Eat it right from the foil, no dishes to clean up.

Sea Bass is on sale, I think that will be my next sous vide project.

With lunch today I grilled some peaches and drizzled a little honey. That's like an orgasm in your mouth. I recommend it.
