Looking to turn up my taco game here. I'm pretty boring when it comes to tacos.. Just meat and cheese. No lettuce. No guacamole. No tomatoes. No onions

What else can I add? Peppers? Some awesome sauce that isn't old El paso?

Maybe my super tasting is getting the best if me.
Not sure whats available to you up in the NE. But if you can get Carnitas shoulder cut (way way better than cutting pork shoulder yourself and costs nothing) slow cooker that shit up with a bunch of cumin/pepper/onion/etc and it'll be heaven.

Poblanos are my favorite pepper in terms of flavor and just the right amount of heat. So I highly recommend using them. I've been making carnitas/kimchi tacos the past few weeks and kept making them because they're god damn delicious. Blend up some salsa verde and its awesome. Or just some srirarcha. See below. Flour tortillas because I'm white as fuck. But am slowly seeing how superior corn ones are.

I bought some corn tortillas and made the grave mistake of eating one raw and it tasted/felt like a dirty flattened turd - is it essential they be cooked? Did I do it wrong?

You didn't even heat it? Note to self - give Noodle better instructions about tortillas...
Incidentally I was taking you baby steps towards a tastier taco since it was clear you were uninitiated in the way of the Masa.
I like oaxaca or chihuahua (or menonita if you can find it) for a softer meltier cheese and think of cotija as Mexican parmesan. All delicious suggestions.
Poblanos are a step up from bell peppers so that was a good suggestion for you.

I would love to find fresh-made tortillas as I suck at making them.
Soygen makes me laugh but I should probably not encourage that.
I have had too much coffee...am working from home but got more done in 4 hours here than in 6 at the office. Yay for wfh. Hey - I'm on lunch.

My mother in law makes tacos with corn tortillas, she cooks them in oil for a second to get them hot, but not crispy.They're ok, but I would rather have it be crispy or a flour tortilla.

My dad used my make tacos by frying a flour tortilla into a shell. The result is similar to a gordita. I always loved it, but it is a pain in the ass to prepare and makes a mess.

This weekend we're getting a foot of snow, you know what that means. Stew time, good bros.

Luckily I had flour tortillas as backup. Those aren't good for me but they sure are fucking delicious.

uncooked: dip in water quickly, throw onto a hot pan/skillet/we, wait until it browns/burns a bit, flip it, burn/brown it, make the taco, eat it.

If you never fuck up a recipe, you're never really trying.
Powerful advice. I can't tell you how many times I made nearly inedible food when trying to put my own twist on things. The payoff comes when you make something that is way better than the original recipe and you are lauded with the greatest affection.

I can't go into detail about what sort of affection. This is the grown up forum.

The worst cooking disaster I ever made (aside from straight burning things) was when I brain farted during a soup recipe that called for apple cider and I accidentally used apple cider vinegar instead.

At the end I tasted for seasoning and only then did I realize my mistake! To be fair, a failed culinary adventure simply turns into an impromptu pizza/chinese/whatever night so I'm not sure why I don't fuck it up more often!
