You're not supposed to taste buttermilk by itself, cultured or authentic. It's an ingredient, full stop. Cocoa powder is pretty horrible by itself too...

I actually have one of those, a Cuisinart. It makes for a crispy exterior (mostly on the bottom) but still a dense waffle. I am pretty certain that will have to be the ingredients.
Use double acting baking powder and let the batter rest for 5 minutes. Don't overmix, will create to much gluten. Should fix it.

I can't believe people used to drink buttermilk straight. I once bought a half gallon by accident thinking that it was 1% milk (they both have green caps) and took a swig of it straight from the carton. Did not enjoy.

That said, it is great and necessary in pancakes, waffles, biscuits, and for marinading chicken before you fry it as well as a ton of other applications. It's in the batter for the world's greatest homemade corn dogs also.

I believe people used to drink real buttermilk, not today's cultured stuff. No idea how different it tastes.

I tried this once, and maybe I didn't let it sit long enough or mix it well enough, but the end product (waffles) had a distinct vinegar taste to it. Would not do it again.

I would say 2 tablespoons in a cup of milk is a lot. I usually use like a teaspoon and it still sours.
