Chinese spice is actually my least favorite, probably cuz my family was never spicy (south/han not spicy, north spice/east seafood), so sichuan ends up being my least fav, same for my wife, so it works out.I was trying to do the northern Chinese chilli crabs, I could put away 3-4 before my body started going into shock, everyone else was ordering a second or third plate. The chefs frying those things in a wok have to wear a respirator or they end up inhaling CS gas.

I've been eating thai legit green curry since it almost killed me on my first trip there (turned out to be the water tho)... there's a couple places in Chicago that do it right. Bangladeshi Vindaloo is fucking crazy spicy too.. i get meat sweats just thinking about it.

I make pretty good kim che soohdubu now, it's really all in the kelp broth, i also use a variation of this broth for tom yum soup too.
i still haven't conquered pho well, everytime i try to make a good broth it pales to restaurants, and the only good pho near me is 90mins 1way. (gonna try ox-tail as a base next)My new thing is a Pho place I found that makes an insanely spicey soup base, very unusual since most Pho is super delicate, cinnamon, basil and mint and other faggot flavors. Hard to find Viet restaurants that bring the heat, but ones who do, damn they layer so much flavor. HnnnnnnGGGgghhh
