I imagine that it's like a lot of food related things, where people form the concept/memory of taste and texture in their minds early in life and that forms their baseline. I was thinking about this in the Fast Food thread when people were arguing about pizza, and you could probably apply it to just about any food. I grew up with both cottage cheese and ricotta (cottage cheese for daily, cheap and lazy lasagna versus lasagna made with ricotta for special occasions) and while I can tell a difference I never thought the difference was that large/important and I'm not a food purist/snob either.

I also eat chili with beans, chili made with ground turkey, I eat it with cheese/crackers/rice or any other way I feel like at the time. There are a lot of chili purists out there who demand that chili be made one way and one way only (coincidentally it happens to be "their" way) but fuck it. It's food, food goes into my stomach, and all food doesn't need to be the same.

Had a GF years ago that refused to feed her two kids mac and cheese from a box (made it from scratch every time) and wouldn't use standard ground beef (would literally have cuts of meat ground into ground beef instead). I mean, that's great...but God damnit people, LOL. People get picky about some strange things sometimes.

Cottage cheese is SLIGHTLY cheaper than ricotta, but I don't see how one is lazier than the other.

As for your picky GF, I believe that's perception of effort, not that it's actually helping(it may be). She went through the extra effort make her kids dinner and ask the butcher to grind up that chuck roast, so she's a good parent. I'll proclaim ignorance as to what's in that orange powder, so I don't know if she may be doing a good thing. The ground meat, however, is bullshit.

For my cheese layer in lasagna, I use cottage cheese. But, I drain all the whey off in a sieve, then mix it with mozzarella, Parmesan, parsley, and garlic. Makes kind of a thick cheese paste that I spread between layers. Also, it has to be small curd cottage cheese for me.

I agree. I've had chili all kinds of ways, and if it's good, it's good. Doesn't matter to me what's in it. I also have been known to eat peanut butter on crackers with chili.

People coming to watch football tomorrow. What should I make? I'm thinking about pulled pork, or maybe ribs. That, with home made rolls, slow-cooked beans, and other finger foods. Oh, and a fruit salad for the healthy.

Thoughts?

I would agree, but I'm usually drinking when I eat wings, so I'll dip them into anything really.

If you don't mind setting up a fryer, I like homemade corn dogs using Alton Brown's recipe. Everyone likes corn dogs and they are way better if they're fried fresh. I tend to cut the hot dogs in half to make them more snacky if it's a football party. I also like to make sliders using potato dinner rolls. I don't know why but burgers taste better in miniature.

More charred, crispy exterior relative to overall burger mass? Burgers are about the only place you can get away with that because it's ground meat and usually served with some or a lot of fat, thus making overcooking more forgiving.

What kinda cooked beans? Baked? Pinto's? (I always love pinto beans, but I think that's a west/southwest thing) Also, green chilies are great in baked beans.

Also, also, pulled pork might be easier? If I smoke a butt, it usually takes me longer than ribs, though.

I also don't like ranch. Which my kids mock me for constantly.

Make some buffalo chicken dip. People love that shit. Perfect football food without the mess of doing full-blown wings

Pulled pork is super easy, which is why I was considering it in the first place. Still not sure. Going to the butcher first thing in the morning.

I was being sarcastic. I don't like wings either. Too messy and there's too much mystery stuff that's unpleasant to eat. Chewy skin, cartilage, unrendered fat, bones, ugh. Too much work for a little amount of meat.

And ranch(i.e. buttermilk dressing) basically shouldn't exist. I can't think of a single usage of ranch in which another sauce/dip/dressing wouldn't be better.

If you have a cast iron skillet, a dutch oven, a wok, or just a high sided pot of any type then you have a fryer. I have one of the fry daddy types and it's nice because it controls the temp itself and doesn't splatter oil around, but when you consider that it can do about 6 wings every 15 minutes it's just not up to cooking for a party.

Also, if you want to make it look prettier, make two batches of batter, one with yellow cornmeal and one with blue cornmeal.

got the most votes and won a day off at work for the best potluck dish, pulled pork.

i like to use shoulder over high heat on the slow cooker for about 8 hrs.

No hate here. Wings are simply "ok" in my opinion. Agreed that it's a lot of work/mess for little pay-off. As I mentioned earlier, though, I'm usually drinking when we get wings so it numbs most of the cons about them.

My brother loathes ranch and we all make fun of him as well.
