my largest sauce pan is 6qt, 10in, and the recipe was using 1cup and 1/2 of rice. i really don't see myself getting an 8qt sauce pan and my stockpot would be too tall for the device

At the back of my mind I was hoping it might be some sort of foolproof method, but that's not risotto. You have to sit monitor, add more liquid, that's why it's risotto. It's a rice dish but it is Way beyond just rice in a sauce with some ingredients.
Why not do this. Why not teach your wife how to actually make it, swing through the kitchen on occasions to make certain it's not getting screwed up, but if she wants it that bad have her stirring the pot. That's what I do with mine. She's gotten good enough at this point where I can turn her loose on certain things and she might occasionally ask me hey what do I need to do now. It is wonderful because essentially I have my own sous chef, I don't have to dick around with simple things.
Train your wife better. Risotto is a wonderful dish and a Chinese knock-off made on TV stirring thing would have people in Italy murdering you if I guess you live close enough to them.
In all seriousness it's supposed to be about enjoying the food that you make. Have you go through the effort of making something like risotto and can execute it well, that's part of the enjoyment.
