I had an epic rice fail last night. As I was getting it ready wife told me we were having guests for dinner so without really thinking I used the same size pot which was probably way too small to begin with and then loaded the double portion of rice/water into it. I ended up with rice gruel. Fuck rice for being such a pain in the ass.
Get a fancy Asian rice cooker, totally worth it.

Nonstick pot, 2 - 1 ratio water to rice, oil / butter, add any aromatics, bring to boil, stir once, set to simmer, cover. Do not stir or touch . You can take the handle of a wooden spoon and just poke holes in the top of the rice when starts to set up to help release moisture. When you don't see any more liquid, shut it off leave it covered and then fluff when you're ready to serve.

Rice Makers are amazing but if you just want to cook in a pan, you can get just as good of results.

Also, buy good rice, and rinse your rise. You can also put your butter or oil in the pot first, and drop your dry rice in and toasted some just stirring it for a minute or two, then add your water or broth or whatever the hell. We do a lot of long grain Jasmine for whatever and it always comes out great.

Wife got ahold of my cast iron pan I got recently. Did hash browns from a bag, Managed to both have them still come out soft and pale like normal but sear them to the pan really good as well.

Any best ways of cleaning this without messing up pan? I didnt think i could just soak cast iron.

Just heat up the pan and then spray it off. Soaking won't really hurt it either. Cast iron isn't really as fragile as people make it out to be. I think most of the worry about ruining the seasoning is from the days when soap had lye in it.

I fill the pan with water and then then heat it up, shit should scrape clean easily after that.

Sounds like it didn't have a good coating of seasoning to begin with, so just soak a few minutes and scrub with a scouring pad. Then rework it's seasoning once clean.

Don't want to soak for hours or leave it wet,but short term sisks are fine. Then dry on the stove and when dry use some fat/oil to cost it and season if you've got some time.

I have a nicely smooth and well seasoned antique Griswold that doesn't stick even for potatoes or eggs. And I have a newer Lodge that will stick some but I just scour it clean and do a quick, half-assed seasoning until I can be bothered to sand it some and spend the time to get a proper seasoning. Sounds like you're in the later camp, so just scrub it like any other pan.

I guess I don't know about longer term seasoning. it's a near new lodge that's adopted to be pre seasoned. did some pancakes and wiped it out then while still warm did a very light layer of oil I rubbed in. But otherwise Virgin b4 she got ahold of it.

Yeah, that's pretty socker mom shit. Went to a dinner party one time and this Jewish couple brought a hot reuben dip. Was served with toasted rye bread crostini's. It was actually pretty good, but I think I brought a Boston butt or maybe a couple of racks of ribs. If you're going to go and have dinner with a bunch of people and bring food for a potluck, bring your A game, not some dumbass recipe you found on the back of a soup can.

Rice is tasteless bullshit BUT if you need to make it, instant pot rice is perfect. And it literally just requires adding equal amounts of rice and water, then pressing the button that says rice.

Save the effort for the real food.

i've made instantpot rice, in fact i have 2 instant pots

instant pot rice is garbage

maybe it's for white ppl rice, but that shit was unedible

The factory preseason is never great, imo, and tends more toward the sticky seasoning rather than a nonstick that one can get. I think they just spay it on hot and it's too thick and brittle. Not the repeated thin coats that gets a good seasoning. Which is still not as durable as one build up over years of use and application.

Will need more oil/fat to keep a new Lodge from sticking and will still be prone to it. Should be treated more like a stainless steel pan. The good news is you can feel better about being rougher with them and not be as concerned about destroying a long term seasoning (like sometimes decades or longer).

Once you get comfortable and like cast iron cooking is when you'll have the urge to have you "good" cast iron that people will be cautious with and the ones you'll throw potatoes or dough in knowing you can scour it without weeping if needed.
