This is such a hard one. You're so right about frittata - fuck frittata right in the burnt eggs - but quiche is just delicious; whats wrong with you?

(That ridiculous Spanish abomination called the Tortilla is also in the Fuck Frittatas category)

I will just start by pointing out that they have different fucking names which is often a reasonably good clue. We can continue though if you wish.

Just don't run before you can walk.

Start with GNochis, lasagna sheet and gloriously thick ass egg noodles. Get a solid handle on those, THEN fight the fettuccini and gum up the angelhair.
It's not that I cant make pasta, I just don't like having a screw around with dough. That's what the wife is for. She does most of the baking and those skills translate into fresh pasta. We've made fresh pasta before, and the only problem we typically run into is it just not being uniform in size, but it tastes delicious, and it's fun. That's one of those meals that we can make together or I focus on the proteins and the overall plan of attack, and she can focus on that critical element, the pasta.

Regarding that particular video, just some serious brinkmanship to create well I guess a three-star dish, and that's why I had mentioned something about the difficulty.

I'm sure if I really sat down and decided every month I'm going to make a homemade pasta dish, I'd get that down pat pretty quickly, it's just not in my current wheelhouse.

Frittatas are a cheap dish (well back when eggs were cheap) that allows you to use whatever you got in the pantry or the fridge. Use up your leftover vegetables and proteins, and you can make a hearty breakfast / lunch / dinner dish on the cheap and you're not wasting whatever you have floating around.

Plus you're not having a dick around with making dough. It's one of the perfect meals after a hard night of partying, and it's basically foolproof. Hell you got some old sliced ham from sandwiches sitting in the fridge, dice that up. Got part of a steak or fajitas, dice that up. Block of cheese getting a little moldy, dice that up. Tomatoes looking a little soft...you get the picture....

Just versatile.

I am sure he has been mentioned, but I love watching this guy and also doing his recipes are all great - except lamb chops - I like the Gordon Ramsay herb crusted ones better.

Surprising you mentioned him, but hej ust posted a Q&A that's pretty fun to listen to. I've been watching his channel for a while and it's just always enjoyable, and you can still learn some pretty nice techniques or recipes.

The man just has a passion for cooking, and when I watch stuff on YouTube nowadays, the things I enjoy most are those that seem genuine. Unfortunately there are a lot of channels out there that are just overproduced, and all for the clicks. It's definitely one of the channels I think is legit, he simply just does it because it's fun for him in his age of retirement. Plus, when he screws up during a cook, he doesn't give a shit, collapse it off and continues finishing the dish. That's what we all do when we cook, and it's very appreciated.

I like him because he /IS/ Chef Gusto from Ratatouille - in its idea, he is doing it. I am sure there is a group of 'chefs' that hate how he presents things and teaches everyone just how to do things. He has a pure joy in cooking and teaching. He also attributes his success to many things in a way... how do I say? ... in a proper way, where he acknowledges his own skill, his own talent and does not dismiss his own stuff while at the same time giving high and proper thanks and praise to everything and everyone that made him. His love for America is loud and out front- that goes hand in hand to his success - it is sad that so many people take what is America for-granted at least and demonize it at worst.

The problem is both frittata and quiche sound pretentious. We just call it egg bake and it's good, especially if you put stovetop stuffing into it.

Muthafucka, I know what it takes to make a quiche or frittata, but adding stove top stuffing mix into the dish is what I was calling out. You know I can cook you under the table any day of the week, even if dog is on the menu...😉

I'd hazard a guess that I might be able to out cook you even on your own streets, as Asian as they might be. Even if you have access to all of your kitchen gadgets, I'll bring to the table superior technique and knowledge, but my plating isn't good and we all know that.

It would be fun to try to figure out some sort of FOH cook off. I don't know how we would do it but at least it'd be a fun experiment for us to screw around with on a weekend.

Also white people do everything better, even eat unhealthily. I'm pretty stricton what we eat, and we normally have just one lax meal during the week. We don't ever eat any pre-process stuff and everything is made from scratch. We never buy junk food, and typically my trip to the grocery store is all for fresh proteins and produce. I'm getting too old, and I can tell when my diet isn't on the right track, especially after my accident at work and stuff. I'm just a hell of a lot more conscientious about it nowadays then I had been when I was in my twenties.

Honestly if we can figure out a way to do a cook-off I think it'd be a lot of fun. I know you know you're way around the kitchen, and despite all of your gadgetry, I still think I can beat ya.
