i'm redo'in how i store food, left overs for one simple reason, gaskets...

lemme explain, my goto storage is the rubbermaid brilliance line

they have non removable gaskets built into the lid , and if you don't keep watch off it, it could get nasty, i have to take a tooth brush and brush along sides.

then theres your regular snap ware, that has removable gaskets

trust me, if you remove these gaskets from the lid and clean em, it's just vile

for dry storage theres no issue, you won't find funky shit if you jsut use a container w/ gasket and store like cereal, but anything refridgerator and wet, (food microwavable) yea, it'll get funky

so i'm just moving all to the restaurant style containers

i mean yea, i already have a few but the nice benefit also is that this is all one uniform size, so i don't have to devote so much "empty space" for different varied sizes of containers... and why can't i be a cheap bastard and just reuse containers i might get from takeout anyway?

all the ones i'd get would have holes in the lids from a knife to let out the vapor, so it'd be leaking anyway.

I'm torn between wanting to make fun of your Amazon addiction and wanting to comiserate with you over gaskets. Nobody in my fuckin family ever cleans the gaskets when they do dishes. I'm like am I the only one who washes dishes with my eyes open or WTF?

Your solution isnt a bad idea. Gaskets aside it solves the #1 problem with tupperware type dishes, the Tupperware Uncertainty Principle: no container and its matching lid can ever coexist at a single point in time. If the container exists, the lid doesnt, and vice versa. There are 18 different kinds of lids available but not that one.

what is this nonsense? if you remove and wash teh gasket every time you remove the lid (like you're supposed to) then there are no issues.

Rather than buying deli containers, just find some product you like that comes in a similar size. Quart or pint Dairy products for example. Doesn't take long to amass a working number of containers, although shrink-flation or buying different brands does fuck up the system.

While I get going with the disposables for take-to-work portions or w-e; for strictly inhouse storage, why not upgrade to the real restaurant stuff, the Cambro (or clone) products? If it's expected to last years in a working kitchen, they'll last a lifetime in the home. Not a fan of the clear acrylic though, gime the slightly less clear but still clear enough Poly(propylene) ones any day for durability.

Only downside with Cambo is how loosely they nest. a Stack of 10 2 quart's is like 2 feet tall. Definitely have to plan space for that.

yea i was thinking about 2 or 3 smaller cambros, mainly marinades, dunno what else i'd use the wider surface for since i already have 3, 1 taller one dedicated to sousvide

I mean that's specifically made small pieces. Breaking spaghetti in half to fit in the pot is just retarded. It will literally cook down into the pot in 30 seconds. I don't really get offended as an Italian; I get offended as someone with an IQ above room temp.
