taking suggestions for desserts based around non-sweetened chocolate. My two leading prospects after a brief internet search are brownies which are boring but safe or chocolate custard which is more adventurous but still seems pretty hard to mess up as I don't have to worry about it failing to set like the lava cakes from a couple weeks ago.

As in, you have a bunch of unsweetened chocolate that you need to use up? Or you want a recipe that specifically highlights chocolate's inherent bitterness?

Do you have a dessert that utilizes cream cheese frosting? You can melt ~6 oz of unsweetened chocolate into a batch of cream cheese frosting.

Something with bananas or fruits in it would probably go well.

You could make an ice cream, and then maybe pair it with the brownies. I guess the question is do you want a dessert that has no sweetness at all, or do you want sweetness from something else to balance it?

I know brownies ala mode is on fancy but if you churn around ice cream, it's infinitely better than store bought. I would think just doing a sweet cream ice cream would pair pretty well. That's not a very super sweet ice cream, but just tastes like heavy cream and it's natural sweetness, but it's not going overboard. You can probably do something with coffee as well since some coffees really have that unsweetened chocolate bitterness.

Just thinking out loud. Honestly don't make a lot of desserts. I might actually have something in one of my cookbooks though. Still it's what Deathwing Deathwing asked, what's the purpose of using that particular chocolate.

I don't know, I still like the chocolate brownies and ice cream idea. I know it's a simple dessert, but if you're making everything from scratch, there's not much that beats gooey brownies and homemade ice cream.

Could always do a ganache and serve it with a fruit compote topping. Or a chocolate custard. Or a chocolate gelato. You could also use the chocolate to serve with Easter Lamb or some pork recipes are good with chocolate.
