best advice to fry is to either fry in
1. dutch oven or cast iron pan
2. electric fryer
1. retains heats like a mofo
2. keeps adding the correct heat.
Also use tons of oil, not b/c you want to "coat" your chicken in oil, but the more oil you have that is pre-heated to the temp you need, the better your cooking will be and you won't have to cook in small batches.
