I held true to my resolution this year by not eating beef/chicken/meat this month. I did have salmon once this month but not sure if that even counts since it's "practically a vegetable" -Ron Swanson. I didn't notice any changes in how I feel or my health overall but I did lose 2lbs. I didn't make any other changes to my lifestyle, ie exercise so whatever.
I think I'll up the ante next year.
