How would that work? I thought Disney nuked all expanded universe stuff as non-canon? How would the rights work with that anyway when it comes to Bioware etc...

Right, but they would own the Old Republic stuff unless there was something in the deal that Lucas/Disney could create movies based on what they did with the setting. I wonder if Lucas Arts being the original publisher of KOTOR (pre EA buying Bioware) might play into it somehow
