You want one with a healthy population. Harbinger is overpopulated, Shadowlands / Ebon Hawk / Jedi Covenant are the next busiest, and Bergeren Colony is towards the low end. The other three are basically ghost towns with horrible economies, not even worth making an alt to check their GTNs.

My wife felt like leveling her Scoundrel yesterday but since I didn't have a character lose to her level I just brought my vanguard and she took the heroics for Alderaan which was the planet she was on at the time. She started at level 27.
A few hours later, just doing Heroics and with only a handful of them remaining, she hit 65.
So if you need to level, now is the best time to do it.

Just a few questions: if I want to start from 1, am I needing just the class quest or also the planet main quest to keep up with levelling?
What's the deal with the new expansion/story? I got an offer to get it for free with a free character boost to 60 on top. Means I need to resub, yes?
Before I go totally mad, I read about companion changes, they are without gear now, etc. are they still good or do I need to boost them somehow?

Double xp runs through until after the new year so you should be able to level just on the class quests.
You don't really need to do anything with your companions. Their capabilities are tied to their influence level and your presence. If you want you can just feed them level 1 & 2 gifts bought on the fleet that they love (here's anifty linkto find out) until they're level 10 or so.
And yes, in order to do the new expansion you have to be subbed.

I'm down to just two armor sets needed for collections, one is a former reputation vendor set that I'll get as soon as the armor packs are sold again, the other is a completely undesirable former direct buy set (Experimental Pilot) that wasn't even in the packs I think. Hopefully they'll fix that.
I leveled just doing the class quests on my Inquisitor last week and then did the three expansions. I was max level about half way through the second expansion.
My /played was like 36 hours to complete my class story and the three expansions not doing any of the bonus portions of the quests but watching all the cut scenes. Kind of crazy.

I think I might need a SS of your collections to drool over. Jesus.
On another note, don't you love when you piss someone off so much in PvP that they make it their mission to drop everything and focus you whenever you're around, even if it costs their team a victory? I think I made a friend for life yesterday.
Every time I make a new toon I am pretty sure I get Experimental Pilot set in my mailbox. Was it for founder status or something?

I do not believe you need them much anymore. At some point they removed the need to routinely train up skills in general and instead you really only need to train new skills when they become available, unless said skill is obtained as part of your discipline. My wife only needed to actually train a small handful of times in the 5 hours we spent getting her from 27 to 65. I'm sure for general play you can get by with waiting until you can hit up the planetary trainer or are on the fleet.
FYI, if you're missing a skill you'll see it's available when you open your skill window (default -> P). So unless you see it there then there's no point in worrying about it.

Maybe you or anyone can answer this for me.
Are collections ONLY available through purchased items?
Like, I'm not going to be able to log in, dump 1000 hours into the game and farm all the collections right? Unless i either start spending creds or buying them through the Cartel market for cash.
