I like ricotta in calzones and lasagna, but it's very very mild in flavor. You need a good sauce or other toppings with it. It's cheese you make in like 20 minutes, so it's not going to develop much.

I like cottage cheese just straight up but it adds a weird bite to the lasagna I did not care for in the least. Lasagna is like the only dish my mom makes better than my wife.

It's actually a pretty common thing, many people live in areas where they have small stores and they don't have a decent varity of cheeses thus, Cottage gets used.

And no, Cottage is cheaper and is more versatile.

Not saying it's a great idea, but those be the reasons. Growing up that's how I had it and it honestly doesn't taste much different....and if I can say that, it must be true.

And fuck you if you put sausage in your lasagna. I've had several friends make it this way lately and ugh. Ground beef all the way. And maybe some diced pepperoni if you want some extra pizzazz.
