We started cooking vegan for dinner just to try out different recipes. We still sometimes substitute ingredients for non-vegan versions. Been pleasantly surprised with a few things. Basically any type of bowl with rice, beans, greens, onions, jalapeno, salsa. Some good soups. Nothing that wouldn't taste better with some good slow cooked pork or chicken, though.
RIP a Raising Cane's closing though. God tier chicken fingers. Instead of substitute slaw for extra toast though you go for fries and 2+ Cane's sauce.
The $1 double stacks at Taco Bell are pretty good value. Grabbed 3 for a snack while traveling yesterday, one of each, the spicy ranch one was decently spicy.
