You can all go and have all the turkey. A goose is so much better than a turkey. A duck is better than turkey, too. Turkey is a lower value meat, inherently dry, and leftovers are like eating sawdust. Goose and duck keep well, and they don't dry out. Plus you can harvest some of the grease and cook your potatoes in it. Duck fat potatoes are amazing.

But from your list I'd have to say stuffing. Not the basic kind you stuff in the ass of your turkey that gets soggy, but the kid made with a hearty bread with a crust, is cooked in a casserole dish, has home made spicy sausage (pork, but could be veal if pork fat is added), and baked to perfection so you have some texture in the bread, not soggy, not totally crunchy, but perfectly seasoned with all the right spices (star anise and Chinese five-spice to start) plus whatever else you put on the duck, like lemon/lime juice. Non soggy and bloody delicious. That's good stuffing. Not wet bread.
