The train level and the second level in the Lion King were significant sources of stress when I was younger.

I feel like Super Metroid should be somewhere on that list. Also, Castlevania: Symphony of the Night? That game was a first of it's kind to throw RPG elements into a platformer and is still so amazing to go back and play.
