Wainscoting, but don't stain it. Paint it. A dark wainscoting will make your entire house dark. Much much darker than you'd think it would.
I've never seen wood paneling that I liked. I have seen wainscoting that I barely noticed. But honestly I'd go with sheetrock, trim, and paint.

Last I checked wood paneling was popular in the 60s. The color abortions of the 70s were considered an upgrade for christ's sake.

I can allow the first picture to be fancy wood panelling. The rest are different. Wood panelling is probably always wall to wall.
