Refresh rate, screen type, response time, resolution. For the most part. It depends on the person. Some think that 120hz is the most important facet where me personally I prefer to have an IPS screen because color shift bothers me. Also if you're going for a 3 monitor setup in the future color shift will be even more evident because the two flanking monitors will be at an angle.
If you're going to do a 3 screen surround setup I'd look at affordable IPS in the 24" to 27" range that are 1080p. That'll be around 5960x1080 in surround which is an assload of pixels so you don't really wanna get into 2560x1440 because it'll be hard/impossible to drive newer games in surround with realistic GPU setups.
