I don’t think that one is a crucible knight is it? That’s just a big boy knight. There is a crucible knight behind stormveil castle if you go left at the barrel birds then right and down the cliff side on some ledges.
Yeah I was talking about that one. He wont come over the ledge, so you can arrow gimp him easily, esp if you have some poison arrows.

Aight, im gonna go upgrade my Bloodhound's Fang and give this another try
That’s what I beat him with. Bloodhound fang up close, range stone toss or gravity stone or whatever it’s called when you have some distance, hop back into range if it hits. Would probably be better with a faster casting ranged spell but it worked for me.

Also their armor is crazy against slashing weapons, equip a mace/flail/hammer type weapon

Fextralife says their phys resists are all 35%, and 40% to all elements. No weaknesses or differences in type of physical.

Crucible knights are honestly all about learning the move set. He has the sword/shield four slash combination that you can hit after the fourth slash, he has sword/shield lunge that he uses when you are out of range and trying to heal (when you get out of range don't try to heal immediately, wait to sidestep the lunge THEN heal). When he blocks he usually follows up with the delayed shield ram, you can cheese him into doing this multiple times by hitting his shield but you have to get the dodge timing down since the delay on the actual hit seems to take forever. Then he has the switch to two-hand aoe stomp then three slash that can be dodged and then an opening. After he grows wings he has the jump/flight into straight lunge that can be dodged.

This is the fight that taught me patience on bosses that don't hit very hard but turtle-y.

wait what?
At 50% the Crucible knight gains some weird wings and gets 2 or 3 new moves, first one he always does on the change is the fly away and then fly at you to spear you, pretty big opening if you get the dodge timing down. (It's not bad but does come faster than you initially expect).

He was the first one that made me learn to parry, makes the fight a lot easier if you dont have spells.

I found phase2 easier than phase1, the charge is trivial to dodgeroll and gives you breathing room. The tail swing is a nuisance at first but perfectly dodgerollable.

If there's one boss you want to learn to parry on, it's the crucible knight. A training montage's worth of parry training will pay off throughout the game.

I think I did the same. I'm going back after a different phases of the game to see if I can buy anything, and no dice. I'm not quite sure why he didn't open his shop. What other quest do you have to complete to fix that?

On my Samurai, I used Bloodhound Fang and patience learning when to dodge his moves as others have said.

On my Sorcerer, I used Ambush Shard to shoot him in the back when he has his shield up.

You can also just kill his ass and take his bell bearing to the shop at the round table hold.
