Winner of the recent World Barista Championships (or some similar nonsense) says that those vacuum setups are actually a pretty shitty thing to do to good coffee. Something about the heat hitting the grounds in a dry state or something.

I believe the setup being used there is similar to a Florence Siphon. The bottom flask acts as the driving force for the water vapor to ascend. Inversely it also acts to strain the coffee as the vapor in the flask cools and pulls the slush through a filter. There's no vacuum if I recall. Neat concept.

I did something similar out of MAKE: magazine with mine coffee. Tastes fine and impresses house guests.
