Since I don't own a restaurant flat-top grill, I use a teflon pan to cook eggs. I can't find a spatula that is thin enough, without being flimsy for a non-stick surface. Anyone have a good one?

Learn how to flip it in the pan like a real man!!!

In all honesty you shouldn't need a super thin spatula. Just let the pan pre-heat on medium heat then pour the scramble in. It should cook up really fast and not stick at all allowing you to shift it in the pan to get any normal sized spatula underneath for a good flip.

Yeah, I should have mentioned it's for over-easy eggs. The plastic and nylon spatulas that I've used are thicker than metal and break the yolks about half the time.

The eggs thing - I think you should try it and get your pan a LOT hotter before you drop the eggs in. I make runny yolk eggs all the time with a very thick spatula and have no difficulty. I let the pan get roughly smoking hot before I drop the eggs in, and put a very small bit of butter right where I'm going to drop the egg just before I drop it. Then I use the spatula a little, and hoist the pan when flipping.

Khane is right but I say fuck it, use a metal spatula in your non-stick pan. It's not really that hard to avoid gouging the surface.

I know what you are saying though. I do sometimes use a metal fork in the non-stick pans which isn't a huge deal if you are careful.

yea i use the fork as well to flip eggs cuz, fuck it, sometimes the spatula is still in the sink, as long as it's crusted, it easily slides off.

It's pretty valid to use a fork to separate any adhered edges that may form before flipping in the pan. This has a lot to do with how good your pan is and how much lubrication you supplied, as well as the heat being used. Super hot decent teflon and you should be able to flip eggs without touching them.

The teflon doesn't even need to be super hot. You can do it on medium heat, just gotta make sure to let the pan get up to temp completely before dropping the eggs in. I still use butter for flavor and if the butter doesn't start sizzling as soon as it hits the pan it ain't hot enough yet.

In fact, you never want to heat a teflon pan on high heat, it's bad for the teflon, starts to break it down and can even make you sick as it disintegrates into your food. Never use a teflon pan for anything that requires more than medium to medium/high heat at most. You don't want your pan getting anywhere near 500 degrees, thats when the problems start.

I don't use our teflon pan for anything besides eggs and the occasional grilled cheese, and I never put them on more than medium heat.

The pan heat has to exceed 600 degrees in order to emit gasses dangerous to humans, no need to be paranoid about it.

This might interest me, I wish I'd seen it yesterday when I ordered from Amazon.

This one I actually held at Target, and considered it for a while. I did like how thin it was, but to me it seemed like it might be too flexible. I guess I like my spatula's rock hard.

You making Ostrich eggs? An egg isn't going to make it bend. I make my eggs in an electric skillet at 200 degrees in butter with the lid on. It's like a poor mans Sous-vide.
