This is the kind of thing that really fascinates me about food. Out of thousands of ingredients there aren't that many actual flavor compounds that are different. In terms of constructing recipes you could do some really interesting theoretical work with data like this.

Paula Deen was the epitome of the "let's get em" internet lynch mob mentality. She admitted (when asked) that she had said the word "American Inventor" at some point in her past and for this her career needs to be destroyed? Fucking retarded. I never liked her or her show but what happened to her was bullshit.

I agree. I doubt we've seen the last of her though. Martha Stewart didn't stay down long, although her monetary power is probably significantly higher than Paula's.

So far the best way i've done giblets is to cook em coq au vin style, i use an asian variation with soy sauce, the liver comes out divine.

Not really cooking, but whatever, anyone freeze fruit? all i do is cut up the fruit, lay it out on a parchment lined tray, freeze for 1hour (so they don't stick to each other) then put in container.

Don't have garden, just that i buy fruits and end up eating em, sometimes forcefully so they don't rot cuz when wife feels like fruit, there is none, and when i give her fruit, she don't want none. She's fine eating frozen fruit.

So far i'm doing pineapple/watermelon/cantalope/kiwi/peaches

she's not a berry person, so i guess all i'm missing is papaya, any others i should throw in?

Do you find your artisinal frozen fruits to be better than what you would get at the megamart? I consume a lot of frozen blueberries and they are dirt cheap, but I can't imagine wanting to take the time to freeze them like you do. I do keep a lot of frozen bananas though, banana "ice cream" and banana breads are fantastic.

yesterday was my first time, ha. This morning going through the mangos/cantalope etc, taste the sameish not as "hard" as in sometimes, the storebought frozen fruit you get a chunk that is as hard as an ice cube.

per oz, it's way cheaper, at least for me a shoprite 12oz frozen mix strawberry,mango,kiwi,papaya,mango is 2.50 to 3.00. i'm gonna do some priceouts soon for it.

also doesn't take time really, breaking down a fruit takes no time, then just lay it out on a baking pan in the freezer.

most annoying would be the fruits with pits, peaches/mango's if anyone has some fruithack to de-pit them easy, thats cool.

We freeze a decent amount of fruit, but I don't bother laying them out on a tray or anything, I don't care if they stick together because they are just going straight into the Vitamix for making smoothies, and that thing could blend a goddamn brick, it doesn't flinch when a big mass of frozen fruit is dropped in.

We just cut it(if needed, for large fruit like bananas, apples, canteloupe, watermelon) and then throw is straight into freezer baggies and dump it in the deep freeze.

I need to get a Vitamix. My blender is ok, but if I dump a fully frozen banana in it, it will struggle.

I would love to have one - I have several friends who have one, and they use it to great effect - but I just can't justify the cost. Holy crap, those things are salty.

As for freezing fruit, we freeze so much fruit, it's crazy. Make smoothies, sauces, and ice cream all year long with our own fruit. Also just keep some thawed, and put it on top of pancakes, or whatever. It's great to have all kinds of fruit on hand all year round.
