Did Chanur mean margarine?
No you can use mayo. Lots of people i have met use it to make grilled cheese. Gives a different texture. Doesn't get dark as quickly as butter.

Used to make them with garlic mayo back in the day and yes on the outside . Not sure why its shocking mayo is basically just egg and oil.

These days I mostly just use a bit of olive oil.

have you guys tested different Sriracha brand mixes?

I obviously have the cock sauce, and it is ONLY for pho, nothing else.

My wife is a ketchup and fries fiend.

I have that big plastic tub that's been linked several times, but I mostly just use my big stock pot as well. If I'm making a lot of portions, I use the tub.

I use the fuck out of my FoodSaver, even when not doing sous vide. It's a great appliance. Ziplocks and water work well enough, but I would recommend a FoodSaver.

Should I also buy a food saver? Or will ziploc bags suffice?
I use ziplocks for more delicate items like fish, but yeah, get a food saver. Can either go to Costco or local butcher and buy meat in bulk, vacuum-seal everything then go straight from your freezer to your sous-vide bath.

I use Ziplocs, just so I can say I use "Archimedes Principle".

I'm fancy like that.

Even if you only use the food saver for sous vide, it is an invaluable tool. You can season, lightly marinade (if needed) and seal up meals ahead of time. Really helps out.

That is actually genius. I've just been using tiny amounts of marinade and making a huge mess.
