I wrapped a pork tenderloin the other night in par-cooked bacon, then cut it into medallions and cooked them like filet mignon. So freaking good.

I also had spaghetti squash for the first time, and the jury is still out. If anyone has a go-to recipe I'm interested. I just cooked it, then sauteed with onion and garlic.
I really like spaghetti squash. Something about the texture, idk. I usually coat it in salt/pepper/and olive oil then cook it for about an hour at 375, then scrape it and mix it with sauce like it was regular spaghetti with meat sauce. Awesome stuff.

Spaghetti Squash isn't very good by itself, but if you do what Chaos suggests and treat it like pasta it's pretty tasty. it's honestly one of the most bland squashes there is.

Also - I dislike spaghetti squash. My family likes it. Hence, I make it regularly and eat a lot of bread during those meals. I don't like the texture, and I find it brings a shit-ass-craptastic flavour to whatever sauce I make for it. Other than that, it's awesome.

We make a stroganoff that is super easy, and I think delicious. Do you ever make it from scratch? We use ground beef, but I've made it with ground venison, and beef roast chunks. I prefer the ground meats, myself.

I would have totally made fun of someone if they were talking about these a few months ago, but with a good sauce, they totally cover my pasta craving with like 1/10th the calories. I've been experimenting with meatball recipes the last month or so and have been eating like 10 zucchini a week.

On that note, anyone have a great meatball recipe to share?

If you're going healthy, and also want easy, the frozen Turkey meatballs from Trader Joes are actually pretty damn good. We always keep a bag of them in the freezer to add to spaghetti or whatever for a quick meal.

I saut? them a little in a skillet in some olive oil and garlic, brown them up just a bit(but they're already pre-cooked) to add some extra flavor, and you'd have a hard time distinguishing them from a regular all-beef meatball. I love em.

I'm generally not a big fan of substituting turkey for beef, I don't want turkey in my chili, I won't eat a turkey burger, fuck all that noise. But these meatballs are legit good.

i already have it, i've only used it for decorations really, and it's collecting dust, so i might as well take it out for a spin, do you use these basic recipes?
Cut zucchini into thin, noodle-like strips (a mandoline works well for this). Toss with the 2 teaspoons salt, and place in a colander to drain for 30 minutes.
Bring a pot of water to boil. Add zucchini; cook for one minute. Drain; rinse immediately with cold water to stop cooking.
Heat margarine in a large skillet over medium high heat. Add zucchini and garlic; cook and stir until just tender, about 5 minutes. Season to taste with salt and pepper. Sprinkle with Parmesan cheese.
