I really like spaghetti squash. Something about the texture, idk. I usually coat it in salt/pepper/and olive oil then cook it for about an hour at 375, then scrape it and mix it with sauce like it was regular spaghetti with meat sauce. Awesome stuff.I wrapped a pork tenderloin the other night in par-cooked bacon, then cut it into medallions and cooked them like filet mignon. So freaking good.

I've been experimenting with meatball recipes the last month or so and have been eating like 10 zucchini a week.

Cut zucchini into thin, noodle-like strips (a mandoline works well for this). Toss with the 2 teaspoons salt, and place in a colander to drain for 30 minutes.
Bring a pot of water to boil. Add zucchini; cook for one minute. Drain; rinse immediately with cold water to stop cooking.
Heat margarine in a large skillet over medium high heat. Add zucchini and garlic; cook and stir until just tender, about 5 minutes. Season to taste with salt and pepper. Sprinkle with Parmesan cheese.
