Meatballs, the hardest food for a restaurant to get right.
My wife used to hate meatballs. Loved Italian, red sauce, white sauce, etc.

Then I gave her Gravy balls, and she's never turned back.

Strangely, I learned how to make meatballs when I was working in a drug store during my college years, and every Saturday the owner would make us lunch. His meatballs were fucking unreal, so I had him show them to me. RIP Don.

Deep Thoughts, with Drunk 'Ern:

1). Don't cook after 3-4 Imperia Stouts (thems powerful)
2). Joeboo, I want to try your chili sometime.! I don't care if you make it with Rotel (seriously WTF mang)
3). Do **NOT** pour 1/4 cup of water into a hot pan then throw a tortilla in there to "steam" it. It ended up like some evil, alien xia xia bao (but dipped in into saucy beans, mmm). I didn't know tortillas would turn half-liquid
3.5) also steamed my hand, fuck
4). don't tale tortyilla #2 and put it in the pan, with some butter (becaue why not?) and then forget about it
5) what do I do with this tortilla that is like a tortilla chip"
6) oh shit is this how they make tortillas? chips FUCK YEAH
7) whoever told me to coat brerad in a grilled cheese with miracle whip can DIAF that was the foulset shit I;ve tasted in a long long time
8.) look at this shit I put choluila on it, total authentiv mexican food I cant bend that fucking tortilla but IDGAF

Bros, I need your guidance!

I've recently discovered Tikka Masala and I want to learn to make it at home. All the recipes I've tried recently have been shit, anyone have a delicious Chicken or Lamb Tikka Masala recipe to share?

Yeah, I'm the king of fucking up Rice, but I'm still going to give it a shot.

I've never tried Chicken Kormah, I don't know about all that Almond+Raisins stuff. Especially the raisins.

Bisi, isn't that the guy that made the ultimate grilled cheese? I think that's the recipe I'm going to try if so.

I'll definitely back that up, Chef John's recipes are always on point. I've made a ton of his shit and it's great. Most recently I took down his cheese cracker recipe and they were absolutely amazing, but not really something I'd put the effort into all the time:

Believe it or not the bottled Tikka Masala sauce they sell in a bottle at Whole Foods is very good. I regularly cook up some chicken cubes and throw some of that on and it's great.. It's at least on par with the mediocre Indian food available in Dallas.

Man, I love Masala Wok's Tikka Masala (even though it's retarded expensive for Naan) and there is a little indian cafe near my work that a husband and wife run that does all you can eat stuff for lunch, it is really good.

But that sauce may be my go to for lunch type applications when I don't have time to make a full meal for the week. Thanks for the heads up!

I'm going to have to hit up more of Chef John's recipes.

Tried the zoodles, my wife prefers the miracle noodles more
Amazon.com : Miracle Noodle Shirataki Pasta, 6 bag Variety Pack, 44 ounces (Includes: 2 Shirataki Angel Hair, 2 Shirataki Rice and 2 Shirataki Fettuccini) : Grocery Gourmet Food

Though in order for the miracle noodles to not taste like cardboard you really have to infuse it, that means cooking it in the sauce. So far i found out my own chicken broccoli sauce works well.
sautee'd onions/garlic/ginger w/ seseme oil
then deglaze w/ soy sauce/vinger add a touch of honey and reduce for 15mins.

i'll see if the zoodles work well w/ this sauce too, b4 i tried more pasta'y tomato flavors.
