If your Okra is slimey, you're cooking it too long. Boiled okra tends to end up that way a lot, I wouldn't recommend that, but fried Okra is one of the best fried vegetables out there. Probably a tossup between fried okra or fried zucchini for me as my favorite fried vegetable.

I've never had okra. Well, I probably have in some gumbo. But I've never specifically cooked with it. I just know that some people complain about the slimy muselix it contains.

Yeah it is good in gumbo if you throw it in towards the end so it doesn't overcook. Fried okra is just amazing fat food though. Real southern shit. Fried okra + fried chicken livers is good shit.

So if you put that stuff in the freezer is it still ice cream the next day or does it turn into a big ice cube? I love homemade ice cream but all of it that I have ever had you pretty much had to eat right away. Alton implied that with his you could actually freeze it though.
Haha it tasted too good to make it over night in the freezer. In the show he put his over night in the freezer and it didnt appear to be a icecube when he served it the next day.

On Alton Brown's podcast he mentioned that he is reworking his youtube channel into basically an online webcast of Good Eats. Shit sounds awesome. He said it is coming soon.

I finally got around to trying his pizza dough for some homemade pizza. It wasn't until I had the dough rested and ready that I realized I don't have a pizza peel. Imagine me trying to get an uncooked pizza into the oven with my hands at 500 degrees with toppings and shit on it. Yeah... that was a failure. Learning experience I guess. I tried to fashion a peel for the second pizza using a couple of silicon cutting boards I have. Yeah... just not good.

On the upside, the crust tasted amazing. On the downside, I now have to clean burned pepperoni and cheese out of my oven and almost no toppings actually survived onto the pizza. It was a goddamn mess.

I was so happy when I heard this. I'm curious what he meant by saying that they were going to do things you couldn't get away with on TV. Fuck whatever that reality tv bullshit he is doing on the Food Network though.

I assume you have a pizza stone? Just make the pizza on a piece of parchment paper and drag it onto the hot stone from the counter. After a couple minutes in the oven you can just pull the paper out from under it.

For the last week I've been trying to eat through several dozen eggs that I got from my uncle, and have made quite a few omelettes. Oddly, out of laziness my omelettes usually turn into a dutch puff and eaten like a pancake. I ran out of cream tho', so probably gonna use the rest in making some challah bread.

Omelets. Meh. I can do them, but I prefer scrambled eggs.

For good scrambled eggs start with a cold sauce pan. Put a knob of butter in it, add the eggs, turn the heat on, stir like a crazy person. When they're almost cooked, add a bit of heavy cream, stir. Don't stop stirring the entire time they're in the pan. Take the pan off the heat periodically and make sure things are stirred well. When they're the texture you want (I like mine a little creamy), put them on some fresh bread, season, and put a little smoked salmon on top. Best breakfast ever.

Never beat your eggs before cooking. Do it as they cook. Much better in my opinion.

Honestly I prefer scrambled eggs also, but I wanted to do something different. My girls had never had an omelette before today.
