There is definitely a lot of shit with food that is just being pretentious, particularly when white people start telling you about "authentic" ethnic food. Now maybe you are angry about cottage cheese in lasagna because it's different than what you're used to and maybe it's because you're a pretentious twat but it certainly isn't because it tastes bad. I think people probably started putting it in there because supermarkets used to be a lot less diverse and you couldn't necessarily just walk down to the store and get ricotta in all parts of the country but the two things are not dissimilar enough to warrant the amount of angst people have over it unless there is some level of condescension getting added in there.

I think you're misinterpreting posts from very sarcastic members of this community.

I couldn't possibly care less if Erronius puts cottage cheese in a dish, but it does not have the taste nor the texture of ricotta. It's not a substitute in my opinion.

Ricotta and cottage cheese have different enough textures to influence the final dish. Since both are currently readily-available and dirt cheap, the "condescension" is mostly warranted.

I honestly don't think anyone is really being like that. You have ripped on Sous Vide several times and I never got any bad vibes from it. It's hard sometimes to convey humor sometimes I guess. This is one of the better threads here and I hope people don't stay away cause they think we are a bunch of foodie super tasting assholes. That's the fast food thread and Noodles job.

Though if you put ketchup on a hotdog you can die in a fire.
