I do 2 at a time, wrapped around the edges of the steamer basket. They overlap on the ends. Once they are done not so much. As for liquid level it gets a bit more but definitely not almost full.

Sous vide prime rib was a success. Nothing crazy to finish it ... Brushed on beaten egg white and crusted with salt and pepper and thrown in the oven @475 until nice and dark.

Came out med rare.

Used the juices to do an au jus.

Started cooking with Szechuan peppercorns. They can really add a lot of good flavor and aroma to most things. Not really spicier than normal pepper either.

I'm like a born-again Christian with this sous vide, but every meal so far has been amazing.

I made tri-tip tonight. Just a little salt, pepper, onion and garlic powder at 130f for 6 hours. Best thing I've had so far.

Fucking cupcake roses are hard; I am going to need to practice for months to "get gud". Anyway, chocolate chiffon cake ports well to cupcake with a bit of added oil to keep them moist. I may need to adjust the heat as the tops are firmer then I would ideally like.

I am going to have to barbecue this weekend and do loads of hard, sweaty labor so that I can have my man-card back after this.

Back in nj, had a salad munchers friend that would come over, she loved my salads.

She never figured out my steamed salads tasted good cuz of butter.

Also, I thought I had cracked my fire box from the nasty winter, but noticed that they all have a space in them. For expansion I recon.
