The bread for pepperoni rolls tends to be a lot more dinner roll like than stromboli. Plus the pepperoni roll came first.

That's correct, we just added flour to the mashed potatoes. We watched a few youtube videos and some people did add eggs, so whatever floats your boat I guess. The recipe we used we got out of a recipe book my girlfriend brought back from a trip to Italy so we did it that way and it turned out pretty well.

I have a recipe for gnocchi that is actually flour and ricotta cheese based. Even easier than potato, but I recommend the potato variety.

So I'm doing leg of lamb either tonight or tomorrow night, but completely undecided on how I'm going to cook it.

Braised? Roasted? Toss it in the slow cooker?

I've never cooked lamb myself, but there is a Good Eats episode about doing it on the grill.

I like to braise lamb shanks this way--leg of lamb should be the same:

Place large, roughly cut carrots in the bottom of a pot or dutch oven to make a bed at the bottom.
Add the lamb shanks/leg on top of the carrots.
Empty a can of whole canned tomatoes on top, squishing the tomatoes with your hand.
Add a large pinch of garlic powder or 5 cloves of raw garlic.
Drizzle 2 Tbsp or so of olive oil over everything.
Add enough of a dry, white wine to cover 1/2-3/4 of the meat.
Salt and Pepper
Cover and bake int he oven @ 350 degrees for about 2 hours.

Delicious.

Side stepping the question, I would ask if there's ever a situation where you'd need 6 pans at once. If not, or rarely, I would focus on a smaller set of better quality. I might be weird, but I also only have 1, ceramic nonstick pan in my closet for eggs.

This is basically the way I do it.

Not a hard dish to make at all. Most important is the temperature. Get a thermometer and stick it in the meatiest part of the leg. It should be around 60 degrees Celsius when you pull it out of the oven, it will gain the rest of the temperature just resting (wrap it in aluminum foil after taking it out of the stove). Should be pink when you carve it.

Serve with a gravy, potatoes and roasted carrots or your favorite vegetables. Brussels sprouts is really good with it.
