Made a nice, cheap soup tonight that's great for fall. Apple and Sweet Potato soup, with a bit of gorgonzola crumbled into it. Had it with a loaf of bread we made this afternoon.

Well done, sir. I made 4 dozen rolls and two bean pies yesterday, I'm ready to put on a feedbag. I'd put up a picture, because they all turned out great, but I'm too lazy. Plus, the crust on the pies looks like hell because they were homemade.

My wife made me a little apple turnover for breakfast with the leftover crust. She's swell.

I'm making the apple pie now, just took the turkey out of the brine and have it resting on the counter, and am prepping everything else. I am hoping the stuffing muffin tin things turn out well, we'll see.

Goose is at 120 degrees, right on schedule. Stuffed with lemons and limes, coated with the zest of the lemons and limes mixed with Chinese 5 spice, sea salt and lots of pepper.

Dressing ready for oven. Made with sour dough and rye bread, onions, celery, figs, pine nuts. Made in a large, flat tray, baked until there's lots of crispy bits.

Four loaves of various bread made.

Cranberry sauce with ginger and cumquats done.

Gravy made with goose stock (from neck and other parts) done

Bread pudding with fig and brandy compote for on top done

Soon on our way to eat. Right after we go sledding.

Happy Thanksgiving to all, and to all a good food coma.

Most depressing time of the year for me and if I'm going to be at home by myself I'm not sharing!


Brisket went in about an hour ago, only 9 more hours to go and it already smells heavenly. I'm really thinking about pulling it out every 2 hours and using a meat syringe to inject the sauce into the meat is this a bad idea?


EDIT: Brisket turned out divine, having to restrain from eating it all.

The stuffing turned out beautiful, I'll never make stuffing another way again. Everything turned out pretty well on my end. It was my first time making parker house rolls, they were kind of dense, maybe I overmixed or something.

So it's Leftovers Day. Family tradition insists that, since we didn't host Thanksgiving, that we must sacrifice another bird so that we may have succulent sandwich meat for the coming year.

I'm getting a cast iron skillet for Christmas. 10 inch. recommendations?
Goodwill starvation army , post thrift stores , have about 10 cast iron pans for less then 75 bucks . Do not have to fuck around with seasoning vintage pans . Best score was a vintage barely used le creuset set of pans for 30 bucks at a goodwill )

The antiques are supposed to be better, somethng about the manufacturing process back in the day. idk, a Lodge is fine and will probably last until your grandkids grandkids throw it away like the entitled pieces of shit they will probably be with no sense of history.

Eh, depends on what kind of an assortment there is. I think I have 7 (6", 8", 10", 12", 10" square pan that I never use, 10" grill pan, and a 2 burner griddle), and if someone offered me 3 more, I probably wouldn't say no

I've got 2 - 12" and a dutch oven that I use quit a bit, and a square grill pan I fucking hate. It's too big a pain in the ass to clean between the grooves.

Dirk: What are you planning on using the pan for? (I like dangling my participles.)
