With regard to the grill pan, like I always say, clean it while it's still hot from the stove. Put it under running water, hit it lightly with your scrub brush, easy peasy. The grill pan is great for vegetables or anything you want grill marks on without having to fire up the grill. It also cooks a hell of a steak.

I've got 2 - 12" and a dutch oven that I use quit a bit, and a square grill pan I fucking hate. It's too big a pain in the ass to clean between the grooves.

Dirk: What are you planning on using the pan for? (I like dangling my participles.)

I don't know exactly what I'll use it for, however, over thanksgiving I watched people cook various things with their cast iron pans. Brussel sprouts with bacon, for example. They came out so nicely browned and evenly cooked, with a nice spice on them. Seems like I should check it out.

If you're only going to have one, make it a 12". Lodge is great and also cheap.

Yeah I have a 12" and use it at least 5-6 times per week. It seemed big at first but as my kids get older and start eating more I am glad I have it.

Anyway, back to this T-day goose you cooked. I've never had goose, but I've had duck plenty. I've heard that goose is greasier than duck, is this the case? Does the skin (like duck) end up being the tastiest part?

Yeah, I am considering a goose for Christmas. Either a goose or a ham. But I don't know the first thing about how to cook a goose so it will probably be a ham.

Go goose! Once you go goose, you never go back...Gravy could make this sound dirty.

Goose is very simple to prepare, and you don't need a lot of expensive ingredients, so spend the money and get a fresh goose. Another thing that makes goose much, much better is a roasting pan with a rack in it so the grease can drip, and the bird is not sitting in it. Also, preparing it with citrus cuts the heaviness that can happen with goose. Here's the recipe I have used several times to great effect:

Of course it's Gordon Ramsay. I have a mad man crush on him and his recipes because every single one that I've used has worked exactly as he said it would, and he's all about simplicity.

There are a couple things about goose that I love in particular. First, the flavour is great. Second, the texture is different - much more like red meat, and add a crispy skin, yum. Third, very moist and tender if cooked slowly and well. Fourth, keep the goose grease, and use it to cook roasted potatoes. You only need a touch of the grease, it changes the flavour of the potatoes from great to awesome. Tiny bit of grease, not lots.

Plus, it's something a little different. Switch things up while remaining traditional.

Have a farmers' market? Usually anyone who sells poultry there will be able to either sell you one or tell you where to buy one. Make nice with the meat section manager at your local supermarket and (s)he will be able to tell you where to get one, too.

Making stock today from the turkey carcass... I always forget how bad I am at properly butchering a cooked turkey until I'm making stock and see how much meat I left on the fucking thing. God damn it.

Which is a great deal and all, but why on earth would you ever need 10 cast iron pans?
use to do some catering now and then . so had a pretty extensive cookware collection. used restaurant supply places one could buy a huge box of stuff for a few hundred bucks back in the day.

Anyone can screw up any cut of meat. I haven't experimented enough to know how much of a difference there is between farm raised and wild goose. I suppose that must make some different. Probably a little tougher, more lean, I guess?

I've shoot a bunch of geese and they aren't bad after they have been down south for a few weeks. The Canada's eat peanuts and they are pretty good and the snows eat mostly rice down here. They are a strong meat but cooked right I like them.

Wild geese are a lot different than store bought domesticated geese.

The ones I have had were greasy and gamey. I don't really know much about domestic geese but it seems like there must be some reason nobody cooks them.
