You're forgetting injuries and concussions. With how hard they have to train they get injured frequently and If they get knocked out in a fight they can get sidelined for 6 months by doctor.The more important each fight is in your career the longer you spend training focused specifically on it and the longer it spends getting hyped. Same thing in boxing. Look at any top fighter's record there, 5-10 fights a year when they start, 1-3 when they're a huge name.
The thing in MMA is some guys are a big name before they've had 10 fights now. Plus the UFC has a couple hundred guys they need to give multiple fights per year. Even running 30 events or whatever it is they can't keep many fighters fighting 5 times a year. Add in the fact that the fighters at the top don't NEED to fight 7 times a year to make rent.
