I was going to put up "Why We Fight." While it might not be the most exciting episode of the series it is one of the most impactful.

Two of the last season episodes of Lost actually come to mind. The one where the Portuguese guy with the dying wife makes a deal with the devil for immortality and the one with Allison Janey being the crazy hippy bitch who stole the babies.
IF you watch them like they were episodes of the twilight zone, and divest yourself of all the previous flim-flam, they're actually some pretty good stand alone episodes.

I just remembered another one: there is an episode of Dream On where Brian Benben's character gets blinded and as a result visualize the other characters through movie clips (which is a step further than usual use of comic punctuation), with his secretary being a grotesque dinosaur. I failed at google-fu, but that episode was hilarious.

Best episode of Dream On was any one with tits. Man that was a great show for my little pre-teen pecker.
Also, Martin's black friend Eddie is in one of those annoying KFC "I ate the bones!?" commercials. Made me go look him up, he was only like 27 when that show started. Always thought him and Martin were supposed to be like middle aged. Guess it's just skewed because I was so young.
