Yeah the restaurants are kinda shit. Just goes to show you can't have a franchise that makes decent bbq. Their sauces win all kinds of rewards though. I also use Devil's Spit as my go to sauce.

I've never had it but it sounds like it should be more of a mustard based sauce. Every gold Carolina style sauce I've ever seen was.

Yes it's mustard based with tons of vinegar. NC is more vinegar based and SC is more mustard and vinegar in their sauce. Also their coleslaw is vinegar based too unlike other parts of the country where it is sweet.
Quaker Steak and Lube recently started selling their wing sauce in my grocery store. Its pretty good. Would recommend.

Both are wonderful and uniquely different then Texas/KC/Memphis. Typically Carolina gold just means South Carolina style.

I like all the different bbq sauces, but have to be in the right mood for them. Certain times I'll cringe at vinegar based sauces, other times it makes my mouth water.

Sweet Baby Ray's Sweet Gold is a decent start. It's not top of the line, but it's a great base for trying out the flavor. Plus it's probably available at any major store unlike "Mrs. PigCows Golden Shower Backyard Pleasure Juice" or whatever shit people are about to suggest.
NB4 people get faggoty about the best mustard based sauce. God knows we achieve it with hot sauces every 3 months.

They opened a Famous Daves by the Nascar track here years ago, and by God it was actually really good. As in, it didn't really seem like a chain place.
At least at first.
I haven't eaten there in 2-3 years now, and mostly went with family because it was close. But over time it just seemed to get worse and worse. The last time some of the meat was cold. Not lukewarm...COLD. Even Subway can manage to microwave the meat for their 'hot' sandwiches.
That entire area by the racetrack is like a"NO GO"zone for BBQ. The Backfire BBQ place (based off of Orange County Choppers?) was terrible and finally closed. The Arthur Bryant's location there rocks a disappointing3 out of 5 stars on Yelp, which should be a crime.

I don't eat it on pork (prefer vinegar based and ketchup based depending on the cut of meat and how it's cooked) or beef but my favorite is Mustard Spice Num Num Sauce. I use it mainly for chicken. It's "local" in that's made in Durham, NC and I'm not sure how widely distributed it is. Pretty sure they have an online store.

Famous Daves is below avg and probably better than any BBQ joint in the DC metro. The pepper vinegar is decent I agree. I guess you take what you can get in DC. People here think they have good pizza and BBQ. Fucking hilarious stick to your crabcakes and gyros.

That territory isn't as clearly defined. Some people here (eastern NC) like vinegar based cole slaw. Others consider it blasphemous. Every hole in the wall BBQ joint, church cookout, and family reunion I've ever been to only had sweet. I don't see how you can make a good BBQ sandwich with vinegar based cole slaw. You need that contrast of flavors.

My point was out of the 4 main regional BBQ areas, Carolina is the only one in general to use that much vinegar in its slaw as opposed to sweeter styles of Memphis/KC/Austin. Any BBQ contest I've ever been (Memphis in May/ American BBQ in KC) it was just the east coasters that had that amount of vinegar and less sugar/mayo. As for individually in NC that can differ I guess but overall that style of slaw is vinegar at least at competitions.
NC is complicated because East NC is as you say way different then western NC and SC.
Overall though the vinegar wins out in your state. (And it's good!)

The one saving grace of Famous Daves is that they had BBQ sauces from pretty much every major nationally known BBQ place. They had like 30 different sauces to choose from, including from local competitors like Gates, Arthur Bryants, etc. I thought that was fairly unique.
