I agree with this, and the other problem with that kind of set-up is that when you bite the pizza, the cheese kind of just slides off rather than sticking properly to the pizza. This results in you getting a little bite of crust, sauce, and toppings, and a huge sheet of cheese hanging out of your mouth. This leaves the rest of the pizza slice empty of cheese, which really ruins the enjoyment of it.Looks good but I've always hated toppings underneath the cheese. Doesn't let them cook correctly so they end up steamed/boiled in sauce and they get a fucked up texture.
I know it was a typo, but "toppings under the pizza" plus your mention of having crispy pepperoni reminded me about one of my favorite things about cooking frozen pizzas in the oven. Without fail, every time I cook a DiGiorno or whatever frozen pizza in the oven, a couple sausages or pepperonis will fall off and land on the bottom of the oven. They get super crispy and charred, and they taste heavenly. I look forward to seeing what's under the pizza every time.I like the pepperoni, sausage, etc to get a little crisp/char going. Pizza in Italty isnt overcooked either and its really GD good almost everywhere. The craziest thing I always see ALL over Italy is that they freaking love french fries on or with their Pizza.I'm pretty sure legit, authentic italian/neapolitan/whatever pizza is supposed to have like a wet center. We have a place in Chicago that is the real deal (and also Eataly makes them like this) and they have a moist center even though the rest of it is charred and cooked. Everyone always says this is how it is meant to be.
