For me I just always find myself going back to the Street Fighter 3 games and Alpha series as well as Tekken Tag 2, Tekken 5/6 and 8, DOA 2-6, Virtua Fighter 4/5 and Soul Calibur 1 and 2 for my go-to and classics. IMO those are the best time tested fighting games.
Never been a real fan of Mortal Kombat, but I did enjoy playing 4 as well as MK2011 and X. MK11 wasn't that bad but fuck the new one. Street Fighter 4 can be fun but I got the new one and I am honestly not really a fan of it, it's more of a complete game than 5 but still not really feelin it. Didn't like Tekken 7 but Tekken 8 has been the biggest fighting game hit for me this generation. I still play some occasional KOF as well, that series has never been my #1, seems like it's always been my solid #2 2D fighting franchise after Street Fighter. I guess after that I'd get into Guilty Gear and Blazblue, same thing in a sense, but I have always been partial to GG as it's longer running and I enjoy the older ones the best. Once I get past that things seem to get more obscure and cultish, but DB Fighterz is probably the last real mainstream fighting game I am into as well as Smash, but only really liked playing Smash locally with friends. I guess I can throw Injustice in there as well. If anyone's played the Deadliest Warrior games, that's a more cultish series I enjoy, Hellish Quart has been a Steamdeck/PC favorite of mine and that's pretty similar.
It's funny, I didn't think I was really into fighting games anymore, but after typing this all out I realized how much I must still enjoy them. I just don't care for the online competitive scene, too sweaty for me, I just like to kick back and enjoy this stuff.
