those are more modern carvings done with softer materials and actual steel tools. the really ancient stuff only had bronze or copper which doesnt do dick to those hard stones and they certainly dont carve 1000 ton trilothons.

pulleys were used 3000 years after the the pyramids were built. ditto the serapeum.

Idk its, been a while since I've done physics, but its not out of the realm of the possible to have quite a few large diameter pulleys to lift very heavy weights with forces generated by humans or animals

Steppe Mammoths, Imperial Mammoths and some we probably don't have records of (alexandria rip). There are more than enough recordings at the world sites that Elephants and relatives were used. We already know giant elephant species existed and were almost fully wiped out by the NA Impact event.
Logically, they were abundant and indentured back then.
Even in our epoch we have had elephants much larger than todays, but our numbers are nonexistent compared to the far past.
Utilizing pulley systems with Elephants or heavy pack animals bearing the brunt of the weight makes perfect logical sense.
