I've only got 5 110s but I usually spend the gearing process learning to play and do pug raids and I'm good. I didn't play my brewmaster for months and stepped right back in where I was.

Credit to someone else here (Khane maybe?), but I use the addon Hekili for some classes. It will give you the rotation order real-time. The others I just looked up on icy-veins for a quick run down.

I got 6-7 toons to 110 before I took a break after we got N Guldan on farm. Came back 4 months ago. Up to 9 now. 8 on main server, hunter on Hyjal. I only do 4 toons daily with missions and shit. 3 on main server and hyjal hunter. I honestly don't have enough interest to get everyone to do all the argus shit at once and level up my other 4 classes right now. That said, I am rolling in the golds right now. If there is a way to keep NuGarrison resources up without going out to do emissary junk I can get my other 110s up easy enough to get back into a WoD style login rotation.
A tool to help learn a class' rotation is a bad thing? Frankly, these addons shouldn't be useful at all but Blizzard likes to randomly make some class rotations pointlessly complicated (Sub Rogue, Feral Druid) while making others stupidly simple (Mage, Hunter).
I'd love to tank on all my talk eligible chars but the rotations for half of them blow complete ass. Especially after playing my druid, to which everything is inferior.

I've played fury, unholy, survival, and enhancement recently and all the rotations/priority lists have basically been the same. Two resource spenders to keep on cooldown, one resource generator, one filler, and one AoE attack. I use global keybinds across specs/characters and a lot of ability types are in the same spot to keep it simple. I feel bad for anyone playing the pointlessly complicated specs.

I think sub rogue is one of the more fun rotations in the game, its complex and requires you to not screw up but has great results when you pull it off.
Most Tanks dont have set rotations (except BrM) since you are using resources to juggle either dps or survivability. warriors have to choose to either IP or revenge, bears maul or ironfur, paladins seraphim or sotr, DH just have lots of upkeeps and low cooldown abilities to juggle, and DK's need to bank RP and not just DS whenever they feel like it. Monk just dps as hard as they can and pops free brews inbetween.
also a lot of the icy veins priority lists are inaccurate or dont reflect the correct way to play a class, i would suggest reading the class discords to get a better idea. the addon "rotation helpers" aren't fantastic either, you'll lose out on about 5-8% dps using one for most classes (tested on WW monk, Fury Warrior, MM hunter, Sub rogue). its better to just learn the class and what your abilities do.

^ what he said. You can try to game things as much as you want using addons or macros or whatever, but at best, you'll be average. If that's good enough for you, there's nothing wrong with that. If you want to be a 1%er, you need to know how things work and when to use them for optimum results.

I'll second sub rogue. It really makes you work for your GCD's where a lot of other classes you can be lazy or screw up a simple GCD and not be punished too heavily for it. On the flip side, I couldn't imagine playing sub on high latency for the aforementioned reason.
However, I do find that sub rogues kind of make you lazy to mechanics since you have so much "oh shit" utility. I know I've personally developed some bad habits playing it, same with aff lock. I just stand in shit and heal for 500k hps a lot of the time and that probably isn't a good habit to develop.

Only played a few dps classes so far this expac.
Easiest? Affliction lock without a doubt. It takes some knowledge of fights and correct talents and not being overzealous with UA but it's hard to parse low with this class.
Arms warrior also is really easy. It's almost the same style of button pressing but you're in melee. Only real difference is the rotation changes based on legendaries or execute phase. Enjoy this class for fun.
WW monk. No one enjoys this. I don't know how you could. It's like running a marathon with a tiny baby leg and a regular leg. Feels shitty to play.
DH way too random for me to enjoy. Low amount of buttons though.

I'm having to switch it up after being gone for a few years, came back and they've just fucked up my poor Unholy DK spec (wtf is this pustule bursting mechanic bullshit).
DH is fun to me right now because it's still shiny and new but definitely not a class I can see maining, seems like more of an fun alt. I'm probably gonna do the Beargod Druid or Frost Mage and keep it traditional. Frost Mage seems almost identical to what it was years ago, if not exactly identical, so easy to readapt to.
