That defense
The o line is pretty good. The rest of the offense ranges from bad to decent with really no standouts. I don't think they will light the world on fire every game, but I do think the offense will be effective if inconsistent.
Edit: in other words I think Chip's schemes will work in the NFL, but it's going to take awhile for the players to implement at a high level and for Chip to evolve his planning for the pro game.

I just watched the replay as I'm a rabid Saints fan.
Chiefs -
First string played first series only, Smith was nice - good dump offs and check downs. Charles looked good, only stayed in first series also. Chiefs D stopped a pissed off 2nd drive by Brees, which is impressive as he really wanted to get into the end zone.
Chiefs really have a nice squad, but lack depth big time. The drop off between the first and 2nd units for a good team is like a mix of guys that could start potentially and guys that should be backups. Chiefs had no guys that should be starting somewhere in the backup squads, nobody I saw anyway. Chiefs special teams played like A + also. 2 great returns and great coverage all day.

They'll have the same problem that the 90s Bills did with the K-gun offense. It's fast paced and can beat the shit out of opposing defenses but it puts a lot of pressure on your defense to also perform and get the ball back quick. However, there's less downtime in between defensive series as a result so the opposing team can just wear them down and take over in the second half. SB25 is a good example of how to do it. Giants had something like 40 minutes of possession.That defense

I don't think the Eagles are doing shit this year.IFthe system works in the NFL (and we have no evidence it will, yet), Kelly doesn't seem to have the personnel for it this year.
I think the tail end of the 2014 and the 2015 seasons will be interesting, but I don't expect anything out of this year.
As for Itlan, I think he out-Dallases the Dallas fans. He's such a joke that I honestly wonder if he isn't a troll account.
As to the Reese/Coughlin Giants, they are a good but not great team with a winning playoff formula that happened to line up especially well with some of the other playoff teams of the era (Patriots, Packers).
I think the tail end of the 2014 and the 2015 seasons will be interesting, but I don't expect anything out of this year.

I think Eagles fans are already putting on the rose colored helmet visors with Chip. I think it's possible the Eagles make some noise but let's be clear here: It's not the first time an uptempo offense has made its way into the NFL. Like I said before, the K-gun Bills have already tread that path. Guess what? It took them about 3 years to get it down to the point that they were in the Super Bowl. Vick is not the answer at QB (never was) and as already pointed out, they have shit for receivers now.
