That version of the god, anyways. On a side note, I don't know if the book ever answered this or not, but I've always wondered something.
A god can have different avatars/aspects (ie, Jesus in this...they more or less confirmed there are a whole bunch of different Jesus, each representing the specific version each demographic envisions for said god). So Mexican Jesus dies in the show, which basically kills that avatar/aspect. However, the demographic that avatar/aspect represented still exists and STILL believes in Jesus. Does that mean another Mexican Jesus would eventually manifest itself, but perhaps changed based on the current views/faiths of the demographic?
It seems like they outlined the only thing that can actually kill a god for good is being forgotten forever.
I don't think Mexican Jesus is actually dead regardless. If you'll recall, there's a story about some people trying to kill Jesus before, and he came back three days later. This is one of the ways Mexican Jesus gains followers. The ones who lived and witnessed what happened will become more fervent believers and spread word of what happened, giving him even more. This relates to what Vulcan said about Wednesday sacrificing himself to himself. Essentially, Mexican Jesus sacrificed himself for power for himself. If I recall, there's a joke in the book about about all the times Jesus sacrifices himself.

The book establishes that you can kill a god, but unless you do it in such a way that his believers lose faith, he never stays dead for long, just like in the myths, the gods regularly cheated death, so somebody is going to figure out a way he may have survived. There are still multiple versions of the same god, IIRC the book ends with Shadow talking to another incarnation of one of the main characters and it is established that you can't blame one for the actions of the other. Which is what makes the new gods so powerful, since they have a single version with no borders.
Yeah, basically the gods are tied directly in to what their believers believe. That's why there can be multiple versions of the gods since there are often different interpretations of a diety. So, if a god was killed and came back, he'd come back the same unless his believers started believing something else. Belief is their lifeforce. The less people that believe, the less powerful they become, until they fade away completely like Nunyunnini (the mammoth god) did last episode.
That's why it's possible Vulcan could return depending on how Wednesday cursed the forge. If that causes the bullets to not fire correctly, people will lose faith in his brand, causing trouble for the company, potentially ruining his town. I don't think that would outright kill him (since people still know who Vulcan is), but he'd likely return in a much less powerful form.
